Ingredients
  

Burrito Filling

  • 1 can black beans, drained and rinsed Rinsing helps remove excess sodium and metallic taste.
  • 2 cups fresh spinach Adds nutrients and flavor.
  • 1/2 cup shredded cheese Cheddar or a blend works well.
  • 1/2 cup salsa Choose mild, medium, or spicy based on preference.
  • 4 large flour tortillas Soft flour tortillas are recommended.
  • 1 teaspoon cumin For added flavor.
  • 1 teaspoon garlic powder Enhances taste.
  • to taste Salt and pepper Adjust seasoning as needed.

Optional Toppings

  • 1 avocado For serving.
  • 1 sour cream For serving.
  • 1 lime For serving.

Instructions
 

Preparation

  • In a non-stick skillet over medium heat, sauté the spinach for about 1 minute until it wilts.
  • Add the drained black beans, cumin, garlic powder, salt, and pepper to the skillet. Stir gently and let it heat through for 2-3 minutes.
  • Stir in half of the shredded cheese and half of the salsa, reserving the rest for topping later. Remove from heat.

Assembly

  • Warm the tortillas in a separate pan or microwave until pliable.
  • Spoon a generous amount of the black bean mixture onto each tortilla and roll them up tightly, folding in the sides as you go.

Cooking

  • Place the rolled burritos seam-side down in the skillet, sprinkle with remaining cheese, cover, and cook on low heat for 2-3 minutes until the cheese melts.

Serving

  • Cut the burritos in half, drizzle with salsa, and top with avocado or sour cream if desired. Enjoy!

Notes

Don’t overfill your burritos to avoid messy results. Use room temperature ingredients for easier rolling. Feel free to customize with additional fillings.
