Ingredients
  

  • Main Ingredients:
  • 2 cups cooked shredded chicken rotisserie works great
  • ½ cup canned black beans rinsed and drained
  • ½ cup corn kernels fresh, canned, or thawed frozen
  • ½ red bell pepper finely diced
  • 2 green onions sliced
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 8 –10 egg roll wrappers
  • Seasonings & Flavor Base:
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cream cheese optional, for creamier filling
  • Pantry Staples:
  • Cooking spray
  • Small bowl of water for sealing wrappers

Instructions
 

  • Prepare the Filling:
  • In a large bowl, combine shredded chicken, black beans, corn, red bell pepper, green onions, and cheese.
  • Add chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  • Mix well. Stir in cream cheese if using.
  • Roll the Egg Rolls:
  • Lay one wrapper in a diamond shape on a clean surface.
  • Add 2–3 tablespoons of filling to the center.
  • Fold bottom corner over filling.
  • Fold in both sides tightly.
  • Roll upward and seal top edge with water.
  • Repeat with remaining wrappers.
  • Preheat Air Fryer:
  • Preheat to 380°F for 3–5 minutes.
  • Air Fry:
  • Lightly spray egg rolls with cooking spray.
  • Place in basket in a single layer (do not overcrowd).
  • Cook 8–10 minutes, flipping halfway through.
  • Spray lightly again after flipping for extra crispiness.
  • Rest & Serve:
  • Let rest 3–5 minutes before serving.
  • Slice diagonally and serve with dipping sauce such as ranch, avocado ranch, chipotle mayo, or salsa.

Notes

  • Do not overfill wrappers to prevent leaking.
  • Seal edges tightly with water.
  • Avoid overcrowding for maximum crispiness.
  • Store cooked egg rolls up to 3 days in the refrigerator.
  • Reheat in air fryer at 350°F for 3–4 minutes.
  • Freeze uncooked rolls and cook from frozen for 12–14 minutes at 380°F.
