- 2 large apples Honeycrisp, Fuji, or Gala
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- Pinch of salt
- 1 egg
- ¾ cup milk
- 1 teaspoon cinnamon
- ½ teaspoon vanilla extract
- 1 tablespoon brown sugar optional
- 1 tablespoon butter or oil for cooking
Wash and dry the apples, then slice them into ¼–½ inch thick rounds. Remove the core using a small cookie cutter or knife to create apple rings.
In a mixing bowl, combine flour, sugar, baking powder, and salt.
Add the egg, milk, and vanilla extract, then whisk until the batter becomes smooth and slightly thick.
Stir in the cinnamon.
Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil.
Place several apple rings flat on the skillet.
Pour about 2 tablespoons of pancake batter into the center of each apple ring, letting it fill the ring without overflowing.
Cook for 2–3 minutes, until bubbles appear on the surface.
Carefully flip each ring with a spatula and cook for another 2 minutes until golden brown.
