These Asian-Inspired Ground Beef & Pepper Rice Bowls are a fast, flavorful dinner made with savory ground beef, tender-crisp bell peppers, and a simple soy-based sauce. Perfect for busy weeknights or meal prep, this easy rice bowl comes together in about 30 minutes and reheats beautifully.

- 1 lb lean ground beef
- 1 tbsp neutral oil vegetable or canola
- 1 small onion thinly sliced
- 2 bell peppers thinly sliced (any color)
- 3 cloves garlic minced
- 1 tsp fresh grated ginger or ½ tsp ground ginger
- ¼ cup low-sodium soy sauce
- 2 tbsp hoisin sauce or 1½ tbsp brown sugar
- 1 tbsp rice vinegar
- ¼ tsp black pepper
- 1 tsp sesame oil optional, for finishing
- 3 –4 cups cooked rice white or brown
- Sliced green onions for garnish
Cook beef: Heat oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
Add vegetables: Add sliced onion and bell peppers. Cook 4–5 minutes until tender-crisp.
Build flavor: Stir in garlic and ginger. Cook 30 seconds until fragrant.
Make sauce: Add soy sauce, hoisin sauce (or brown sugar), rice vinegar, and black pepper. Stir well and simmer 3–5 minutes until the sauce thickens and coats the beef and peppers.
Finish: Turn off heat and drizzle with sesame oil if using. Taste and adjust seasoning.
Serve: Spoon beef and pepper mixture over warm rice bowls and garnish with green onions.
