Ingredients

For the Fritters

  • 1 cup all-purpose flour
  • 1/2 cup Greek yogurt
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup sugar (or a sugar substitute)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1 large egg (lightly beaten)
  • 1 spray cooking spray or parchment paper for baking

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  • In another bowl, mix the Greek yogurt, sugar, egg, vanilla extract, and blueberries.
  • Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid overmixing.
  • Using a tablespoon or cookie scoop, drop batter onto the prepared baking sheet, allowing room for spreading.
  • Bake for 15-20 minutes, or until golden brown on top.
  • Let the fritters cool on a wire rack for a few minutes before serving.

Notes

Best enjoyed warm, but can be stored for later. Avoid overmixing to keep fritters light. Options for variations include adding lemon zest, nuts, or using different fruits like raspberries or strawberries.
