  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs gluten-free if needed
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the zucchinis thoroughly. Cut off the ends and slice them into thin, even rounds, aiming for about 1/4 inch thick. Place the sliced zucchinis on a clean towel or paper towel to absorb excess moisture.

Coating

  • In a large bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Lightly spray a baking sheet with olive oil or cooking spray. Dip each zucchini slice into the breadcrumb mixture, coating both sides evenly, and lay them on the baking sheet.

Baking

  • Bake the zucchini chips in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown.
  • Once out of the oven, let the chips cool for a few minutes to ensure they’re extra crispy.
  • Serve warm and enjoy!

Notes

To customize, consider adding cayenne pepper or red pepper flakes for spice, or try pairing with sauces like marinara or basil pesto.
