  • ½ cup breadcrumbs plain or panko
  • 1 large egg
  • ¼ cup finely diced red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon Dijon mustard
  • 4 burger buns optional
  • Seasonings & Flavor Base:
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of smoked paprika

Instructions
 

  • Preheat Oven:
  • Preheat oven to 400°F.
  • Line a baking sheet with parchment paper or lightly grease it.
  • Prepare Salmon:
  • Finely chop salmon into small ¼-inch pieces using a sharp knife, or pulse briefly in a food processor. Do not over-process.
  • Mix Patties:
  • In a large bowl, combine chopped salmon, breadcrumbs, egg, red onion, parsley, Dijon mustard, lemon juice, and seasonings.
  • Mix gently until just combined.
  • Shape Patties:
  • Form mixture into 4 equal patties.
  • Place on prepared baking sheet.
  • Lightly spray tops with olive oil.
  • Chill (Optional but Recommended):
  • Refrigerate patties for 15–20 minutes if they feel soft.
  • Bake:
  • Bake for 12–15 minutes, flipping halfway through.
  • Cook until lightly golden and internal temperature reaches 145°F.
  • Rest & Serve:
  • Let rest 3–5 minutes before serving.
  • Serve on toasted buns with lettuce, tomato, and sauce, or enjoy over salad.
