- 2 large ripe bananas mashed
- ½ cup butter melted (or coconut oil)
- 1 teaspoon vanilla extract
- ¼ cup brown sugar or maple syrup optional, depending on banana ripeness
- 1 cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¾ cup chocolate chips semi-sweet or dark
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mash bananas until mostly smooth.
Stir in melted butter (or coconut oil), vanilla extract, and brown sugar or maple syrup if using.
Add flour, baking soda, cinnamon, and salt. Stir just until combined.
Fold in oats and chocolate chips gently.
Scoop about 2 tablespoons of dough per cookie onto the baking sheet. Flatten slightly.
Bake for 10–12 minutes, until edges are set and centers look soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
