Ingredients
  

For the Chicken Marinade

  • 1 pound boneless, skinless chicken thighs or breasts Use chicken thighs for juicier skewers.
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon Sriracha Adjust based on spice preference.
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for about 30 minutes Prevents burning during grilling.

Preparation

  • In a large bowl, combine the vegetable oil, soy sauce, Sriracha, honey, rice vinegar, minced garlic, and grated ginger. Mix well.
  • Cut the chicken into bite-sized pieces and season with salt and pepper. Place the chicken pieces in the bowl with the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Grilling

  • Thread the marinated chicken pieces onto the soaked skewers, aiming for about 4-5 pieces per skewer.
  • Preheat your grill to medium-high heat.
  • Cook the skewers for approximately 12-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  • Remove the skewers from the grill and let them rest for a few minutes before serving.
  • Serve hot, drizzled with extra sauce or paired with a refreshing dip.

Notes

For serving, pair with jasmine or brown rice, fresh salads, or various dipping sauces like peanut or yogurt-based sauce. Leftover skewers can be refrigerated for up to 3 days or frozen for later use. For some extra flavor alternatives, try vegetable, shrimp, or tofu skewers.
