Ingredients
  

  • 2 cups cooked shredded chicken
  • cups fresh pineapple sliced or chunks
  • 1 large bag tortilla chips
  • ¾ cup BBQ sauce
  • cups shredded cheese cheddar, Monterey Jack, or blend
  • 1 small red onion thinly sliced
  • 1 jalapeño sliced (optional)
  • 1 tablespoon olive oil
  • Salt to taste
  • Optional: sour cream cilantro, green onions

Instructions
 

  • Preheat grill or grill pan to medium heat.
  • Toss shredded chicken with BBQ sauce until coated.
  • Brush pineapple with olive oil and grill 2–3 minutes per side.
  • Remove pineapple and cut into bite-sized pieces.
  • Preheat oven to 375°F (190°C).
  • Spread tortilla chips on a baking sheet.
  • Layer BBQ chicken over chips.
  • Add grilled pineapple, onion, and jalapeños.
  • Sprinkle cheese evenly on top.
  • Bake for 10–12 minutes until cheese is melted and bubbly.
  • Let cool slightly, then add toppings and serve.

  • Grill the pineapple for the best sweet, caramelized flavor.
  • Avoid overloading chips to keep them crispy.
  • Use freshly shredded cheese for better melting.
  • Assemble just before baking for best texture.
