  • 4 large portobello mushroom caps
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 cloves garlic minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • Optional: pinch of red pepper flakes

Instructions
 

  • Whisk together olive oil, soy sauce, garlic, balsamic vinegar, smoked paprika, thyme, and black pepper.
  • Place mushrooms in a shallow dish and coat with marinade.
  • Let marinate for 10–15 minutes.
  • Heat a skillet over medium heat and lightly oil it.
  • Cook mushrooms cap-side down for 5–6 minutes per side.
  • Alternatively, grill at 375°F for 5–7 minutes per side.
  • Let rest for 2–3 minutes and spoon juices over before serving.

  • Clean mushrooms with a damp towel, not water.
  • Removing gills is optional for milder flavor.
