Ingredients
  

Main Ingredients

  • 1 pound ground beef (80/20) Use good quality beef for juicy patties.
  • 8 small flour tortillas Can substitute with corn tortillas or lettuce wraps.
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese Adds creaminess to the patties.
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil (for skillet) Can use canola or vegetable oil.

Sauce Ingredients

  • ¾ cup mayonnaise Base for the special sauce.
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

Preparation

  • In a large skillet, heat the neutral oil over medium-high heat. While it’s heating, combine the ground beef, salt, and black pepper in a bowl. Shape the meat into balls (about 2 ounces each).
  • Once the skillet is hot, add the meatballs, ensuring they’re not touching. Using a spatula, smash each ball down to create patties about ¼ inch thick. Cook for about 3-4 minutes on one side until browned.
  • Flip the patties and immediately place a slice of American cheese on each. Let them cook for another 2 minutes until the cheese is melted and the patties are cooked through.
  • In another pan, warm the flour tortillas over medium heat until soft and pliable, about 30 seconds on each side.

Assembly

  • Start with a warm tortilla, place a cheesy smash burger patty in the center, and layer with shredded lettuce, pickle chips, and chopped onions.
  • In a bowl, combine mayonnaise, ketchup, mustard, sweet pickle relish, vinegar, paprika, garlic powder, and onion powder for a sauce that mimics the Big Mac dressing. Drizzle this on top of your assembled tacos.

Serving

  • Fold the taco in half and dig in! These are best enjoyed fresh, so don’t hesitate to set up a taco bar for a fun gathering experience.

Notes

Quality of meat matters; use 80/20 for juicy patties. Ensure skillet is hot for perfect smash. Consider alternative tortillas for different diets.
