Ingredients
  

For the noodles

  • 12 pieces Lasagna noodles Cooked according to package instructions.

For the filling

  • 1 lb Ground beef Cook until browned.
  • 1 cup Ricotta cheese
  • 1 cup Mozzarella cheese Shredded.
  • 2 cloves Garlic Minced.
  • 1 tbl Olive oil For sautéing.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Italian seasoning To taste.

For the sauce

  • 2 tbl Butter For making the roux.
  • 2 tbl Flour To create the roux.
  • 2 cups Milk Gradually added for sauce.
  • 1 tsp Salt
  • 1 tsp Pepper

Topping

  • 1/2 cup Parmesan cheese Grated, for topping before baking.

Instructions
 

Preparation

  • Boil a pot of water with a pinch of salt, and cook the lasagna noodles according to package instructions until al dente (8-10 minutes). Drain and lay flat on parchment paper.
  • In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for about a minute. Add ground beef, and cook until browned. Season with salt, pepper, and Italian seasoning to taste.
  • Let the beef mixture cool slightly, then mix in ricotta and mozzarella cheese.

Assembly

  • Spread a thin layer of the meat and cheese mixture over each lasagna noodle. Roll each noodle tightly but gently, and place seam-side down in a baking dish.

Sauce and Baking

  • Melt butter in a saucepan over medium heat. Whisk in flour to create a roux, then gradually add milk while stirring until thickened. Season with salt and pepper.
  • Pour sauce over the rolled noodles, sprinkle Parmesan cheese on top, and cover with foil. Bake at 375°F (190°C) for 25-30 minutes. Remove foil for the last 10 minutes to brown the tops.

Serving

  • Allow the lasagna roll-ups to rest for a few minutes before serving. Pair with a fresh garden salad or garlic bread.

Notes

Don’t overcook the noodles, and customize your cheese blend for different flavors. Can be prepared a day in advance and stored in the refrigerator.
Freeze before baking for a quick meal later, adjusting baking time as necessary.
