Ingredients
  

Cheese Mixture

  • 2 cups shredded cheese (a mix of cheddar and cream cheese) Feel free to experiment with different cheese types.
  • 4-6 jalapenos, diced Adjust the amount based on your heat preference.
  • 1/2 pound cooked and crumbled sausage Optional, adds richness to the bites.

Breading and Frying

  • 1/2 cup flour For coating the bites.
  • 1 cup breadcrumbs For a crunchy outer layer.
  • 2 eggs, beaten Used for binding.
  • to taste salt and pepper Season to your liking.
  • as needed oil For frying (vegetable or canola).

Preparation

  • In a mixing bowl, combine your shredded cheese, diced jalapenos, cooked sausage (if using), and a pinch of salt and pepper. Mix until evenly combined.
  • Take small portions of the mixture and form them into bite-sized balls.
  • Prepare three shallow dishes – one with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each cheese ball in flour, dip it in the beaten egg, and then coat it in breadcrumbs.
  • In a deep pan, heat the oil over medium heat. Once hot, gently drop in your coated cheese bites, a few at a time. Fry until golden brown and crispy, usually about 3-4 minutes.
  • Remove the bites and let them drain on paper towels to absorb excess oil.

Notes

Chill coated bites in the fridge for at least 30 minutes before frying for better shape retention. Optionally bake at 400°F for 15-20 minutes for a healthier version. Avoid overfilling the bites.
