Preparation

  • Start by slicing the chicken breasts, bell pepper, and onion into thin strips.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chicken strips, sprinkle them with fajita seasoning, and cook until they are browned and cooked through (about 5-7 minutes).
  • Once the chicken is cooked, add the bell pepper and onion to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.

Assembly

  • In each meal prep container, layer the rice or quinoa at the bottom.
  • Top with a generous portion of the chicken and veggie mixture.
  • Add a scoop of black beans and corn.
  • To keep things fresh, add optional toppings like avocado, lime wedges, fresh cilantro, or salsa when you're ready to eat.
