Main Ingredients

  • 2 cups cooked rice Preferably day-old rice for better texture
  • 1 cup cooked chicken, diced
  • 2 eggs beaten
  • 1/2 cup peas
  • 1/2 cup carrots, diced
  • 2 cloves garlic, minced
  • 2 shallots chopped

Seasoning

  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil For frying
  • to taste Salt and pepper
  • to taste Green onions, sliced For garnish

Preparation

  • Prepare your ingredients: Have all ingredients ready to go.
  • Heat the vegetable oil in a large wok or skillet over medium-high heat.
  • Pour in the beaten eggs and scramble until fully cooked. Push them to the side.
  • Add minced garlic and shallots to the empty side of the wok. Sauté until fragrant.
  • Stir in diced chicken, peas, and carrots. Cook until everything is heated through.
  • Add in the cooked rice, breaking up any clumps. Stir-fry for about 3-4 minutes.
  • Drizzle soy sauce over the mixture, seasoning with salt and pepper to taste.
  • Once everything is heated through, remove from heat. Garnish with sliced green onions before serving.

Notes

For best results, use day-old rice to avoid stickiness. Mix other vegetables as desired, and add chili flakes for heat.
