Ingredients
  

For the Dough

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 2 teaspoons instant yeast
  • 1/2 cup warm milk
  • 1 cup cold unsalted butter
  • 1 cup cold water

For the Filling

  • 1 cup chocolate chips or chocolate bar pieces Use high-quality chocolate for best flavor.

For the Egg Wash

  • 1 large egg For brushing on top before baking.

Preparation of Dough

  • In a large mixing bowl, combine the flour, sugar, salt, and yeast. Mix well.
  • Slowly add warm milk and cold water to the dry ingredients, mixing until a dough begins to form.
  • Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth.
  • Shape the dough into a rectangle, wrap it in plastic, and refrigerate for an hour.

Prepare Butter Block

  • Place cold butter between two sheets of parchment paper and pound it into a flat rectangle about 1/2 inch thick.
  • Chill the butter block in the fridge until the dough is ready.

Laminate the Dough

  • Roll the chilled dough out into a rectangle about 1/4 inch thick.
  • Place the chilled butter block in the center of the dough and fold the sides over the butter to seal it inside.
  • Roll the dough out again into a larger rectangle, fold it into thirds like a letter, wrap it, and refrigerate for another 30 minutes.
  • Repeat this rolling and folding process two more times.

Shape and Bake Croissants

  • After the final fold, roll the dough into a large rectangle, approximately 1/4 inch thick.
  • Cut the dough into long triangles and place a piece of chocolate near the base of each triangle.
  • Starting from the base, roll each triangle tightly toward the tip to create a crescent shape.
  • Place the croissants on a baking sheet lined with parchment paper, leaving space for them to rise.
  • Allow the shaped croissants to rise in a warm spot for about 1-2 hours until they've doubled in size.
  • Preheat your oven to 400°F (200°C) and brush the tops of the croissants with beaten egg.
  • Bake for 15-20 minutes, or until the croissants are puffed and golden brown.

Notes

Store croissants in an airtight container at room temperature for up to 2 days. For longer storage, freeze them before baking and bake directly from the freezer when ready to enjoy.
