Ingredients
  

Dough Ingredients

  • 1.5 cups warm water Temperature should be around 110°F (43°C).
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 0.25 cups granulated sugar
  • 1 teaspoon salt

Topping Ingredients

  • 0.25 cups baking soda For boiling bath.
  • 1 each egg, beaten For brushing.
  • 0.25 cups cinnamon
  • 0.25 cups granulated sugar (for coating)
  • 1 tablespoon coarse sea salt For sprinkling.

Preparation

  • Combine warm water and active dry yeast in a bowl and let sit for about 5 minutes until frothy.
  • In a large mixing bowl, combine flour, granulated sugar, and salt.
  • Gradually add the yeast mixture to the flour mix and stir until a dough forms.
  • Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  • Form the dough into a ball, place in a greased bowl, cover, and let it rise for 1 hour until doubled in size.

Baking

  • Preheat oven to 425°F (220°C).
  • Divide the dough into 8 equal pieces and roll each into a long rope, then shape into a pretzel.
  • In a large pot, bring 10 cups of water and baking soda to a boil.
  • Carefully dip each pretzel into the boiling water for about 30 seconds.
  • Place boiled pretzels on a parchment-lined baking sheet, brush with beaten egg, and sprinkle with cinnamon sugar and sea salt.
  • Bake for 12-15 minutes until golden brown.

Notes

For best results, allow dough to rise properly and do not over-knead. Leftovers can be stored in an airtight container for up to 2 days.
