Preparation

  • Start by selecting two slices of your chosen bread. Lightly toast the bread if desired.
  • If using herbed cream cheese, either purchase it or mix cream cheese with fresh herbs and a pinch of salt in a bowl.
  • Cut the tomatoes into thick, even slices to ensure they sit well in the sandwich.

Assembly

  • Spread a generous layer of herbed cream cheese on both slices of bread.
  • Layer the tomato slices on one piece of bread.
  • Sprinkle salt and pepper over the tomato slices.
  • Add fresh herbs if using, sprinkling on top of the tomatoes.
  • Close the sandwich with the other slice of bread, gently pressing down. Cut in half and serve immediately.

Notes

Season your tomatoes by letting them sit with salt for 10-15 minutes before assembling to draw out moisture and enhance flavor. Experiment with different types of bread, and consider grilling the sandwich for a panini-style treat.
