Cookie Base

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  • Add in the egg, key lime zest, key lime juice, and vanilla extract. Beat until well incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  • Gently fold the coconut flakes into the mixture.
  • Using a cookie scoop or tablespoon, scoop out portions of dough and roll them into balls.
  • Roll each ball generously in powdered sugar.
  • Space the dough balls about 2 inches apart on the prepared baking sheet.

Baking

  • Bake for 10-12 minutes, or until the edges start to turn golden brown but the centers remain soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
