Ingredients

  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 1 medium yellow onion diced
  • 2 cups broccoli florets
  • 1 medium zucchini chopped
  • 1 medium potato peeled and cubed
  • Flavor Base
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • Optional Add-Ins
  • ¼ cup coconut milk for dairy-free creaminess
  • ¼ cup heavy cream optional, if not dairy-free
  • Squeeze of lemon juice for brightness

Instructions
 

  • Prep Ingredients
  • Wash and chop all vegetables into evenly sized pieces.
  • Sauté Aromatics
  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook 5–6 minutes until softened.
  • Stir in garlic and cook 30 seconds.
  • Add Remaining Vegetables
  • Add potato, zucchini, broccoli, thyme, basil, salt, and pepper.
  • Simmer
  • Pour in vegetable broth until vegetables are mostly covered.
  • Bring to a boil, then reduce to a gentle simmer.
  • Cover and cook 20–25 minutes until vegetables are fork-tender.
  • Blend
  • Use an immersion blender directly in the pot, or carefully transfer soup in batches to a high-speed blender.
  • Blend until completely smooth and velvety.
  • Adjust & Finish
  • Taste and adjust seasoning.
  • Stir in coconut milk or cream if desired.
  • Add a squeeze of lemon juice for brightness.
  • Let rest 5 minutes before serving.

Notes

  • Make sure vegetables are fully tender before blending to avoid grainy texture.
  • Blend longer than you think for ultra-smooth consistency.
  • If soup thickens after chilling, add a splash of broth when reheating.
