  • 1 cup Parmesan Cheese Freshly grated for best flavor; avoid pre-grated.

Preparation

  • In a medium saucepan, bring 4 cups of water or broth to a rolling boil.
  • Gradually add 1 cup of cornmeal, whisking continuously to prevent lumps from forming.
  • Lower the heat to a simmer and continue stirring frequently. Cook for about 20–30 minutes, or until the polenta has thickened and is smooth.
  • Once the polenta is thick and creamy, stir in 2 tablespoons of butter and 1 cup of grated Parmesan cheese. Mix until fully incorporated.
  • Add salt to taste and any additional spices or herbs you prefer.

Notes

Letting polenta sit for a few minutes before serving can help it set slightly, making it easier to slice if desired. Be sure to stir continuously to avoid lumps.
