  • chocolate chips Adds sweetness and texture.

Instructions

Preparation

  • In a large mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to mix until well blended and smooth.
  • Take a small spoonful and taste to check sweetness, adjusting as necessary.
  • Line an 8x8 inch baking dish with parchment paper or lightly grease it to prevent sticking.
  • Evenly pour the peanut butter yogurt mixture into the prepared dish, smoothing the top for an even layer.

Freezing

  • Place the dish in the freezer and let it set for at least 4-6 hours, or until completely frozen.
  • Once frozen, lift the mixture out of the dish using the parchment paper, and cut into bars or squares.

Serving

  • Let them sit for a few minutes at room temperature before enjoying. Pair with your favorite toppings for added crunch and flavor!

Notes

Use full-fat Greek yogurt for best results. Let bars sit out for a couple of minutes before serving for easier cutting. These bars can be rich, so portion control is recommended.
