  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley for garnish

Preparation

  • Rinse the baby potatoes under cold water to remove any dirt and pat them dry. Optionally, cut them in half for extra crispy edges.
  • In a pot, bring salted water to a boil. Add the baby potatoes and cook them for about 15 minutes, or until fork-tender.
  • Drain the potatoes and let them sit for a few minutes to cool, allowing excess moisture to evaporate.

Cooking

  • Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Carefully add the cooled potatoes to the skillet and season with salt and black pepper. Toss to coat each potato in the garlic butter.
  • Increase the heat to medium-high, letting the potatoes sizzle and crisp up for about 10-15 minutes, turning occasionally to achieve a golden color.
  • Transfer the crispy potatoes to a serving dish, drizzle with additional melted butter, sprinkle with freshly chopped parsley, and serve.

Notes

Don’t overcrowd the pan to prevent steaming. Adjust heat levels if necessary, and a cast iron skillet yields great results.
