Ingredients
  

For the Zucchini Fries

  • 2 medium zucchinis
  • 1 cup breadcrumbs Can use gluten-free if desired.
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • as needed oil for baking or frying Olive oil or vegetable oil.

Preparation

  • Wash the zucchinis and cut off the ends, then slice them into fry shapes, about ¼ inch thick.
  • In a mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper, mixing well.
  • In another bowl, crack the eggs and whisk them until frothy.
  • Dip each zucchini fry in the egg mixture, then roll it in the breadcrumb mixture, pressing gently to help the coating stick. Place the coated fries on a baking sheet.

Cooking

  • If baking, preheat the oven to 425°F (220°C) and drizzle the fries with oil before baking for 20-25 minutes, turning halfway through.
  • If frying, heat the oil in a deep pan and fry the fries in batches for about 3-4 minutes until golden brown.

Serving

  • Place the cooked fries on a wire rack or paper towels to absorb excess oil and serve immediately with ranch dressing.

Notes

For extra crispiness, pat the zucchini dry before coating, and consider double coating them. These fries are great as a snack, appetizer, or side dish.
