  • 1 teaspoon Italian seasoning
  • 3 cloves garlic minced
  • ¼ teaspoon red pepper flakes optional

  • 1 tablespoon cornstarch + 1 tablespoon water optional, for thickening

Instructions
 

  • Lightly grease a 6-quart crock pot with nonstick spray.
  • Place chicken in a single layer in the bottom. Season lightly with pepper and a small pinch of salt.
  • Sprinkle garlic and sun-dried tomatoes evenly over the chicken.
  • Pour in chicken broth and heavy cream.
  • Sprinkle Italian seasoning and red pepper flakes on top.
  • Cover and cook:
  • Low: 5–6 hours
  • High: 2½–3 hours
  • Once chicken reaches 165°F and is fork-tender, stir in parmesan cheese until the sauce is smooth.
  • If needed, thicken sauce with cornstarch slurry and cook an additional 10–15 minutes.
  • Taste and adjust seasoning. Garnish with fresh herbs if desired.

Notes

  • Always add parmesan at the end to prevent a grainy sauce.
  • Chicken thighs are more forgiving and extra juicy, but breasts work beautifully.
  • For a Tuscan-style twist, stir in fresh spinach during the last 10 minutes.
