  • 4-6 medium-sized Bell Peppers, any color
  • 1 pound Ground beef, turkey, or plant-based meat
  • 1 cup Cooked rice or quinoa
  • 1 can (15 oz) Tomato Sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup Shredded cheese (optional) Use if desired
  • to taste Salt and Pepper
  • 1 cup Chopped onions and garlic (optional) Use if desired for extra flavor

Preparation

  • Slice the tops off your bell peppers and remove the seeds and membranes. Set them aside.
  • In a bowl, combine the cooked meat, rice or quinoa, tomato sauce, onions, spices, and a bit of salt and pepper. Mix well!

Assembly and Cooking

  • Carefully fill each pepper with your prepared mixture, pressing down slightly to pack in those delicious flavors.
  • Place the stuffed peppers upright in the Crock Pot. Drizzle any remaining tomato sauce over the tops if you like.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the peppers are tender and the filling is heated through.
  • If you want cheesy goodness, sprinkle cheese on the peppers and let it melt for the last 10 minutes of cooking.

Notes

Customize your filling by using different proteins, spices, or adding beans for extra fiber. Pre-cook veggies for a softer texture. Pair with a salad or bread to complete the meal.
