- 10 –12 rice paper wrappers
- 1 cup red cabbage thinly sliced
- 1 cup carrots julienned
- 1 cup cucumber cut into matchsticks
- 1 cup bell peppers thinly sliced
- 1 ripe avocado sliced
- For the Peanut Sauce
- 1/3 cup natural creamy peanut butter
- 2 tbsp soy sauce or tamari
- 2 tbsp fresh lime juice
- 1 –2 tbsp honey or maple syrup
- 1 clove garlic minced or grated
- 1 –2 tsp chili paste or sriracha optional
- Warm water as needed to thin

- 1/2 tsp sesame oil
- Salt to taste
Wash and prep all vegetables, slicing them evenly.
In a bowl, whisk together all peanut sauce ingredients until smooth. Thin with warm water if needed.
Fill a shallow bowl with warm water.
Dip one rice paper wrapper into the water for 5–10 seconds until pliable.
Lay wrapper flat on a clean surface.
Place a small portion of vegetables and avocado near the bottom third of the wrapper.
Fold in the sides, then roll tightly like a burrito.
Repeat with remaining wrappers and fillings.
Let roll-ups rest for 2–3 minutes before serving.
Serve with peanut sauce on the side.
