Ingredients
  

  • For the Rainbow Roll-Ups
  • 10 –12 rice paper wrappers
  • 1 cup red cabbage thinly sliced
  • 1 cup carrots julienned
  • 1 cup cucumber cut into matchsticks
  • 1 cup bell peppers thinly sliced
  • 1 ripe avocado sliced
  • For the Peanut Sauce
  • 1/3 cup natural creamy peanut butter
  • 2 tbsp soy sauce or tamari
  • 2 tbsp fresh lime juice
  • 1 –2 tbsp honey or maple syrup
  • 1 clove garlic minced or grated
  • 1 –2 tsp chili paste or sriracha optional
  • Warm water as needed to thin
  • Optional
  • 1/2 tsp sesame oil
  • Salt to taste

Instructions
 

  • Wash and prep all vegetables, slicing them evenly.
  • In a bowl, whisk together all peanut sauce ingredients until smooth. Thin with warm water if needed.
  • Fill a shallow bowl with warm water.
  • Dip one rice paper wrapper into the water for 5–10 seconds until pliable.
  • Lay wrapper flat on a clean surface.
  • Place a small portion of vegetables and avocado near the bottom third of the wrapper.
  • Fold in the sides, then roll tightly like a burrito.
  • Repeat with remaining wrappers and fillings.
  • Let roll-ups rest for 2–3 minutes before serving.
  • Serve with peanut sauce on the side.

Notes

  • Do not over-soak rice paper; it will continue softening as you roll.
  • Keep assembled rolls covered with a damp towel to prevent drying.
  • Best enjoyed fresh for optimal texture and flavor.
