  • 9 pieces lasagna noodles (preferably no-boil)
  • 2 tablespoons olive oil For sautéing vegetables
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 5 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup Parmesan cheese, grated
  • 1 cup heavy cream For creaminess
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil (optional, for garnish)

Instructions
 

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and garlic, cooking until softened.
  • Follow with the sliced mushrooms, sautéing for about 4-5 minutes.
  • Add the fresh spinach, stirring until wilted. Season with salt, pepper, and Italian seasoning. Set aside.

Cheese Mixture

  • In a bowl, combine the ricotta cheese, 1 cup of mozzarella, and ½ cup of Parmesan cheese.
  • Pour in the heavy cream and mix until smooth.

Assembly

  • In a deep baking dish, spread a thin layer of the cheese mixture at the bottom.
  • Place three lasagna noodles on top.
  • Add half of the sautéed vegetables and a layer of the cheese mixture.
  • Repeat this process, ending with a final layer of noodles topped with the remaining cheese mixture and a generous sprinkle of mozzarella and Parmesan.

Baking

  • Preheat your oven to 375°F (190°C).
  • Cover the lasagna with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15 minutes until the top is bubbly and golden.

Cooling and Serving

  • Let your lasagna rest for about 10 minutes before slicing.
