Ingredients
  

  • 3 cups fresh watermelon cut into small cubes
  • 2 cups prepared vanilla pudding
  • 1 cup whipped topping or whipped cream
  • ½ cup crushed graham crackers optional
  • ½ teaspoon vanilla extract
  • 1 tablespoon honey or sugar optional
  • Fresh mint leaves for garnish
  • Cold milk for preparing pudding if using instant mix

Instructions
 

  • Prepare the vanilla pudding according to the package instructions using cold milk.
  • Whisk until the pudding becomes smooth and thick, then refrigerate for about 5 minutes to slightly set.
  • Cut the watermelon into small bite-sized cubes and gently pat them dry with a paper towel if they are very juicy.
  • Place 1 tablespoon crushed graham crackers at the bottom of each dessert cup (optional).
  • Add a layer of vanilla pudding over the graham crackers.
  • Add a layer of watermelon cubes.
  • Repeat the layers of pudding and watermelon until the cup is nearly full.
  • Finish with a swirl of whipped topping or whipped cream on top.
  • Garnish with fresh mint leaves, extra watermelon cubes, or graham cracker crumbs.
  • Refrigerate the cups for 15–30 minutes before serving for the best texture.
