  • 4 ears ears of corn, husked and cleaned Fresh, in-season corn is recommended.
  • 1/2 cup mayonnaise Use your preferred mayonnaise.
  • 1 cup crumbled cotija cheese Can substitute with feta cheese if unable to find cotija.
  • 2 tablespoons juice of limes Freshly squeezed for best flavor.
  • 1 teaspoon tajín powder Adjust to taste for spiciness.
  • to taste none Salt Essential for enhancing flavors.
  • to taste none Chopped cilantro for garnish Optional, for added flavor and decoration.

Preparation

  • Start by boiling or grilling the corn. If boiling, place the husked corn in a pot of salted water and cook for about 5-7 minutes until tender.
  • For grilling, cook the corn over medium-high heat until charred and cooked through.
  • Once cooked, allow the corn to cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
  • Add the mayonnaise, lime juice, crumbled cotija cheese, tajín powder, and salt to the corn. Stir until everything is well combined and the corn is lightly coated.
  • Spoon the mixture into cups or bowls and garnish with additional cotija cheese, a sprinkle of tajín, and chopped cilantro for that fresh, herbal kick.
  • While esquites can be served at room temperature, enjoy them warm for a more comforting experience.

Notes

For a unique twist, explore adding fresh herbs like mint or parsley, or consider drizzling a bit of hot sauce for extra kick. Always serve fresh for the best taste.
