  • 1 lb ground beef (or turkey/chicken for a leaner option)
  • 1 small onion, finely chopped
  • 1 medium bell pepper, diced (choose red, yellow, or green)
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if desired)
  • 1 large egg
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika

  • 1/4 cup fresh cilantro, chopped (optional)

  • Shredded cheese

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  • In a large bowl, combine ground meat, chopped onion, bell pepper, minced garlic, breadcrumbs, egg, chili powder, cumin, smoked paprika, salt, and pepper. Fold in cilantro for extra flavor.
  • With clean hands, form small meatballs (about 1 inch in diameter) from the mixture and place them on the prepared baking sheet.

Baking

  • Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and browned.

Serving

  • Toss the meatballs in your favorite sauce or serve them plain with a platter of toppings.

Notes

Do not overmix ingredients to avoid tough meatballs. Feel free to experiment with spices and add veggies for moisture. These meatballs freeze well for later meals.
