Preparation

  • Wash your tomatoes thoroughly. If using smaller ones, halve or quarter them; larger tomatoes can be roasted whole.

Oil and Season

  • Lightly coat the tomatoes with olive oil and sprinkle with salt and pepper to enhance flavor.

Roasting

  • On a grill, place the tomatoes cut-side down directly on the grill grates and roast for 5-10 minutes.
  • On a stovetop, hold whole tomatoes with tongs and rotate them over the flame for about 2-3 minutes per side or use a cast-iron skillet.
  • In the oven, preheat the broiler, place tomatoes on a baking sheet, and broil for about 10-15 minutes, flipping halfway through.

Cool and Peel

  • Remove the tomatoes from heat and let them cool slightly. The skins should easily peel away. You can leave the skins on for larger tomatoes to maintain a rustic feel.

Storing

  • Store any unused fire-roasted tomatoes in an airtight container in the fridge for up to a week or freeze them for longer shelf life.
