For the Waffles

  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained) Fresh spinach is recommended for better flavor.
  • 1.5 cups whole wheat flour (or gluten-free flour for a gluten-free version) Use a gluten-free blend if needed.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk (or plant-based milk for a dairy-free version)
  • 2 large eggs
  • 3 tablespoons olive oil (or melted coconut oil)
  • 0.25 cup grated cheese (optional) Adds great flavor!
  • Various spices (like garlic powder, onion powder, or herbs, to taste) Customize to your liking.

Preparation

  • If using fresh spinach, rinse it well and chop it coarsely. Sauté it lightly in a skillet until wilted.
  • In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and any spices.
  • In a separate bowl, combine the buttermilk, eggs, and olive oil. Add the sautéed spinach to the mixture.
  • Add the wet ingredients to the dry ingredients, gently folding until just combined. Do not over-mix!

Cooking

  • Preheat your waffle iron according to the manufacturer’s instructions and lightly grease if necessary.
  • Pour an appropriate amount of batter onto the waffle iron and cook until golden brown, about 4-5 minutes.

Storage

  • Once cooked, let the waffles cool on a wire rack. Store in an airtight container or freezer bag, separating layers with parchment paper.

Notes

Don’t rush the sautéing of spinach to enhance the flavor and reduce moisture. Toast when reheating for best results.
