  • 4 pieces boneless, skinless chicken breasts
  • 4 medium-sized potatoes, diced Waxy potatoes like Yukon Golds are recommended.
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced Fresh garlic recommended for stronger flavor.
  • 1 cup grated parmesan cheese
  • 1 tablespoon dried Italian herbs Or fresh herbs of your choice.
  • to taste salt and pepper
  • for garnish Fresh parsley Optional for garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix olive oil, minced garlic, Italian herbs, salt, and pepper. Add the diced potatoes, tossing to coat evenly.
  • On a large baking sheet, spread the potatoes out in a single layer.
  • Place the chicken on top of the potatoes.
  • Sprinkle parmesan cheese generously over the chicken and potatoes.

Cooking

  • Bake for approximately 30-35 minutes, until chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are fork-tender.

Serving

  • Let it cool for a few minutes, then sprinkle fresh parsley on top and serve warm.

Notes

For better flavor, marinate the chicken in olive oil, garlic, and herbs for at least 30 minutes before cooking. Consider broiling for 2-3 minutes at the end for a crispier texture.
