Ingredients
  

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 cup chicken broth
  • 1 cup heavy cream Can be substituted with low-fat cream
  • 1 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning Could swap with thyme or rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Begin by rinsing the baby potatoes thoroughly. Halve them and set aside. Mince the garlic.

Layering

  • Place the chicken breasts at the bottom of the crockpot. Sprinkle salt, pepper, and Italian seasoning over the chicken.
  • Layer the halved baby potatoes on top of the chicken. Add the minced garlic evenly over the potatoes.

Adding Liquids

  • In a mixing bowl, whisk together the chicken broth and heavy cream. Slowly pour this mixture over the chicken and potatoes.

Cooking

  • Add the grated parmesan cheese on top.
  • Cover and cook on low for 6-7 hours or on high for 4-5 hours.

Serving

  • Once cooked, garnish with freshly chopped parsley before serving.

Notes

For best results, do not overcrowd the crockpot and ensure the seasoning is not skipped. If you prefer a thicker sauce, remove the cover for the last 30 minutes of cooking.
