Ingredients
  

For the Hummus Layer

  • 1 can 1 can of chickpeas, drained and rinsed
  • 2 tablespoons 2 tablespoons tahini
  • 2 tablespoons 2 tablespoons olive oil
  • 1 each 1 lemon, juiced
  • 1 clove 1 garlic clove, minced
  • to taste Salt

For the Avocado Layer

  • 2 each 2 ripe avocados
  • 1 each Juice of 1 lime
  • to taste Salt and pepper

Vegetable Layer

  • 1 cup 1 cup cherry tomatoes, diced
  • 1 each 1 cucumber, diced
  • 1/2 each 1/2 red onion, finely chopped
  • 1/2 cup 1/2 cup kalamata olives, sliced
  • to garnish Fresh parsley

Instructions
 

Preparation

  • In a food processor, blend the chickpeas, tahini, olive oil, lemon juice, garlic, and salt until smooth. Adjust seasoning to taste. Transfer to a shallow serving dish and spread as your base layer.
  • In a bowl, mash the avocados with lime juice, salt, and pepper. Carefully layer this mixture on top of the hummus.
  • Sprinkle the diced tomatoes, cucumbers, red onions, and kalamata olives over the avocado layer to create a fresh, colorful display.
  • Finish with a sprinkle of fresh parsley for garnish.
  • Serve with pita chips, sliced veggies, or warm pita bread.

Notes

Choose the ripest avocados and the freshest veggies to enhance the flavors. You can prepare the layers a few hours in advance and store them covered in the refrigerator to avoid browning. For added flavor, consider incorporating spices like cumin or herbs like basil and mint.
