  • 1 cup 1 cup of plain Greek yogurt Provides creaminess and protein.
  • 1 clove 1 clove of garlic, minced Adds aromatic flavor.
  • 1 medium 1 medium onion, finely chopped For depth of flavor.
  • 2 tablespoons 2 tablespoons of olive oil For sautéing.
  • 1/4 cup 1/4 cup of grated Parmesan cheese (optional) Enhances richness; omit for a dairy-free version.
  • Salt and pepper to taste Season according to personal preference.
  • 1 pinch A pinch of nutmeg (optional) Adds warmth to the dish.

Preparation

  • If you’re using fresh spinach, rinse it thoroughly. For frozen spinach, ensure it’s thawed and squeezed dry.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the chopped onion and minced garlic, stirring until the onion is translucent and fragrant, about 2-3 minutes.
  • Gradually add the spinach to the pan, stirring until wilted. If using frozen spinach, cook until heated through.
  • Remove the skillet from the heat and stir in the Greek yogurt until fully incorporated.
  • Sprinkle in salt, pepper, and a pinch of nutmeg (if using). Stir in the grated Parmesan cheese for extra flavor, if desired.
  • Transfer the creamed spinach to a serving dish and enjoy warm!

Notes

For variations, consider adding fresh herbs like dill or parsley, or try using different types of cheese such as cheddar or feta. Serve as a dip with pita chips or stir into pasta for a unique meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
