- 1 packed cup fresh baby spinach washed and dried
- 2 ripe bananas
- 1 ripe avocado peeled and pitted
- ½ cup rolled oats
- 2 tablespoons almond butter or peanut butter
- 1 tablespoon chia seeds optional
- 1 teaspoon vanilla extract
- 1 –2 tablespoons honey or maple syrup optional, to taste
- 1 tablespoon lime or lemon juice
Line a baking sheet with parchment paper and clear space in your freezer.
Add spinach to a food processor and pulse until finely chopped.
Add bananas, avocado, nut butter, vanilla extract, and citrus juice. Blend until smooth and creamy, scraping down the sides as needed.
Add rolled oats and chia seeds. Pulse just until combined.
Taste and adjust sweetness if needed.
Scoop the mixture into bite-sized portions and place them on the prepared baking sheet.
Freeze for 45–60 minutes, or until firm.
Transfer to an airtight container and store chilled.
