- 1½ –2 lbs boneless chicken thighs
- For the marinade:
- 3 tbsp olive oil
- 3 cloves garlic minced
- 2 tbsp lemon juice or vinegar
- 1 tbsp soy sauce
- 1 tsp paprika
- 1 tsp dried oregano or Italian seasoning
- Salt and black pepper to taste
- Optional:
- 1 –2 tbsp honey
- Chili flakes
- 1 tsp Dijon mustard
In a bowl, whisk together olive oil, garlic, lemon juice, soy sauce, paprika, oregano, salt, and pepper.
Add chicken thighs and toss until fully coated.
Cover and refrigerate for at least 30 minutes (ideally 2–8 hours).
Remove chicken from fridge and let sit at room temperature for 10–15 minutes.
Preheat grill to medium-high heat and lightly oil the grates.
Grill chicken for 5–7 minutes per side until internal temperature reaches 165°F (75°C).
Remove from grill and let rest for a few minutes before serving.
