Ingredients
  

For the Marinade

  • 1/4 cup fresh cilantro, chopped Adds a fresh flavor
  • 2 whole limes, juiced Provides tanginess
  • 2 tablespoons olive oil Moisture and flavor
  • 1 teaspoon garlic powder For additional flavor
  • to taste Salt and pepper Season to preference
  • 1 teaspoon red pepper flakes Optional for a spicy kick

For the Sweet Potatoes

  • 4 medium sweet potatoes Look for firm ones without blemishes

Instructions
 

Preparation

  • Preheat the grill to medium-high, around 400°F (200°C).
  • Wash the sweet potatoes thoroughly, then slice them into rounds or wedges about 1/2 inch thick.
  • In a large bowl, combine the cilantro, lime juice, olive oil, garlic powder, salt, and pepper. Add the sweet potato slices and toss until well coated.

Grilling

  • If using a grill basket or aluminum foil, place the sweet potatoes on it. Grill for 15-20 minutes, flipping halfway through, until tender and with nice grill marks.

Serving

  • Remove from the grill, adjust seasoning if necessary, and sprinkle with extra cilantro and lime juice to finish.

Notes

For best results, cut sweet potatoes evenly and avoid overcrowding on the grill. You can experiment with spices for added flavor and serve them with grilled meats, in salads, or tacos.
