- Salt and black pepper to taste
- 1 –2 tbsp olive oil
- For the filling:
- 2 cups fresh spinach chopped
- 3 cloves garlic minced
- ½ cup shredded mozzarella or provolone
- ¼ cup grated parmesan
- 1 tbsp olive oil
- Optional:
- Sun-dried tomatoes
- Mushrooms
- Red pepper flakes
Butterfly the flank steak by slicing it horizontally and open it up.
Pound the steak to an even thickness for easier rolling.
Heat olive oil in a pan and sauté garlic until fragrant.
Add spinach and cook until wilted, then let cool slightly.
