Ingredients
  

  • –2 lbs flank steak butterflied
  • Salt and black pepper to taste
  • 1 –2 tbsp olive oil
  • For the filling:
  • 2 cups fresh spinach chopped
  • 3 cloves garlic minced
  • ½ cup shredded mozzarella or provolone
  • ¼ cup grated parmesan
  • 1 tbsp olive oil
  • Optional:
  • Sun-dried tomatoes
  • Mushrooms
  • Red pepper flakes

Instructions
 

  • Butterfly the flank steak by slicing it horizontally and open it up.
  • Pound the steak to an even thickness for easier rolling.
  • Heat olive oil in a pan and sauté garlic until fragrant.
  • Add spinach and cook until wilted, then let cool slightly.
  • Mix spinach with mozzarella (or provolone) and parmesan.
  • Spread the filling evenly over the steak, leaving a small border.
  • Roll the steak tightly into a log and secure with twine or toothpicks.
  • Slice into 1–1½ inch pinwheels.
  • Preheat grill to medium-high heat.
  • Grill pinwheels for 4–5 minutes per side, turning carefully.
  • Remove from grill and let rest for a few minutes before serving.

Notes
