Ingredients
  

Tomato Ingredients

  • 1 lb cherry tomatoes or grape tomatoes Choose ripe, in-season tomatoes for best flavor.

Marinade Ingredients

  • 1.5 tablespoons olive oil
  • 4 cloves garlic, peeled Minced for better flavor infusion.
  • 0.125 teaspoon salt
  • 1 tablespoon parsley, chopped For garnish.
  • 0.5 lemon Juice of Adds brightness to the marinade.

Preparation

  • Wash the tomatoes and pat them dry. If using larger tomatoes, cut them in half.
  • In a medium bowl, combine olive oil, minced garlic, salt, and lemon juice.
  • Add the tomatoes to the bowl and gently toss until they’re evenly coated with the marinade. Let them sit for about 10 to 15 minutes to absorb the flavors.

Grilling

  • Preheat your grill to medium-high heat. Wait for the coals to be covered with white ash if using charcoal.
  • Thread the marinated tomatoes onto skewers, soaking wooden skewers in water for 30 minutes to prevent burning.
  • Place the skewers on the grill and cook for about 5-7 minutes, turning occasionally until the tomatoes are softened and have grill marks.

Serving

  • Once grilled, remove the skewers and sprinkle with fresh parsley before serving.

Notes

For best results, do not overcrowd the grill and watch the cooking time closely to prevent burning. Grilled tomatoes can also be used as a salad topping or bruschetta base.
