  • 2 units ripe avocados Choose just ripe for best texture.
  • 4 units hard-boiled eggs Cooked and peeled.
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired.
  • 1-2 tablespoons lemon juice Add to taste.

Preparation

  • Start by boiling the eggs. Place them in a pot of cold water, bring it to a boil, and then let them simmer for about 9-12 minutes. Once done, immerse them in cold water to stop the cooking process.
  • While the eggs are boiling, scoop out the avocados into a large bowl. Use a fork to mash them to your desired creaminess.
  • Peel the hard-boiled eggs and chop them into bite-sized pieces. Add them to the bowl with mashed avocado.
  • Fold in the finely chopped red onion, cilantro, lemon juice, salt, and pepper.
  • Taste your salad and adjust the seasoning or add more lemon juice according to your preference.
  • Enjoy it on whole-grain toast, in lettuce wraps, or straight from the bowl.

Notes

For the best flavor, use ingredients at room temperature. Avoid overmixing to retain a pleasing texture. Experiment with spices like cumin or smoked paprika for a unique twist.
