Preparation

  • Wash the cucumbers and cherry tomatoes. Dice the cucumbers and halve the tomatoes. Place them in a large mixing bowl.
  • Toss in the cooked shrimp, ensuring they are chilled.
  • Add thinly sliced red onion and chopped cilantro to the bowl. Drizzle olive oil and lime juice over the top, then season generously with salt and pepper. Sprinkle red pepper flakes if you like spice.
  • Gently mix everything until well coated. Optionally, fold in diced avocado.
  • Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
