Ingredients

  • 1 cup old-fashioned oats
  • ¾ cup almond flour or oat flour
  • 1 large ripe banana mashed (about ½ cup)
  • ¼ cup fresh spinach or 1 teaspoon matcha powder
  • Seasonings Sauces, or Flavor Base
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon optional
  • Pantry Staples
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 –2 tablespoons honey or maple syrup optional, to taste
  • 2 tablespoons melted coconut oil or olive oil

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a blender or food processor, blend the banana with spinach until completely smooth and bright green. (If using matcha, stir it into the mashed banana instead.)
  • In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
  • Stir in the banana mixture, oil, vanilla extract, and sweetener if using.
  • Mix until a soft dough forms.
  • Scoop dough onto the prepared baking sheet (about 2 tablespoons per cookie) and gently flatten.
  • Bake for 10–12 minutes, until edges are set and bottoms are lightly golden.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • These cookies are meant to be soft, not crispy.
  • Do not overbake or they will dry out.
  • Natural green color varies depending on spinach freshness or matcha quality.
