  • 2 pieces ripe bananas, mashed Use overripe bananas for better sweetness.
  • 1 cup natural peanut butter (creamy or crunchy) Choose natural peanut butter without added sugars for a healthier option.
  • 1 cup rolled oats Gluten-free oats can be used for a gluten-free version.
  • 1/4 cup honey or maple syrup Optional, depending on desired sweetness.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • a pinch salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the mashed bananas and peanut butter until smooth.
  • Add in the rolled oats, honey or maple syrup, vanilla extract, baking soda, and salt. Stir until well combined.
  • Fold in any optional add-ins like chocolate chips, nuts, or dried fruit gently.

Baking

  • Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet. Flatten them slightly.
  • Bake in the preheated oven for 10-12 minutes or until the edges turn slightly golden.
  • Let the cookies sit on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for about 3-5 days, or refrigerate for longer storage. You can also freeze the uncooked dough or baked cookies as needed.
