Ingredients

  • 2 cups fresh strawberries hulled
  • 1 ½ cups plain Greek yogurt full-fat or low-fat
  • 4 oz cream cheese softened
  • 2 –3 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup crushed graham crackers optional

Instructions

  • Wash and hull the strawberries, then slice them if large.
  • Add strawberries to a blender and blend until smooth.
  • Add Greek yogurt, softened cream cheese, honey (or maple syrup), and vanilla extract.
  • Blend again until the mixture becomes smooth and creamy with no lumps.
  • If using graham crackers, sprinkle a small amount of crushed crumbs into the bottom of each popsicle mold.
  • Pour the strawberry yogurt mixture evenly into the molds, leaving a little space at the top.
  • Insert popsicle sticks and gently tap the molds on the counter to remove air bubbles.
  • Freeze for 4–6 hours or until completely solid.
  • To release, run the mold under warm water for 10–15 seconds and gently pull the popsicle out.

Notes

  • Use thick Greek yogurt to avoid icy popsicles and achieve a creamy texture.
  • Taste the mixture before freezing to adjust sweetness if needed.
  • For easy removal, silicone popsicle molds work best.
  • You can sprinkle extra graham cracker crumbs or drizzle honey on top before serving.
