  • 2 tbsp olive oil
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 4 medium carrots peeled and thinly sliced
  • 3 medium zucchini chopped
  • Flavor Base & Seasonings
  • 1 tsp ground cumin
  • ½ tsp dried thyme or Italian seasoning
  • ¾ tsp salt adjust to taste
  • ½ tsp black pepper
  • 4 cups low-sodium vegetable broth
  • 1 bay leaf optional
  • 1 –2 tbsp fresh lemon juice
  • Pantry Staples Optional
  • Water or extra broth for thinning
  • Extra olive oil for finishing

Instructions
 

  • Sauté the aromatics
  • Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until soft and translucent.
  • Add garlic
  • Stir in garlic and cook for 30 seconds, just until fragrant.
  • Build the soup
  • Add carrots, zucchini, cumin, thyme, salt, and black pepper. Stir to coat vegetables evenly.
  • Simmer
  • Pour in vegetable broth and add bay leaf if using. Bring to a gentle boil, then reduce heat to medium-low. Simmer for 15–20 minutes, until vegetables are very tender.
  • Blend
  • Remove bay leaf. Blend soup with an immersion blender (or carefully in a countertop blender) until smooth and creamy.
  • Finish
  • Stir in lemon juice. Taste and adjust seasoning as needed. Thin with water or broth if desired.
