Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Herbs:
  • 2 tablespoons parsley chopped
  • 1 tablespoon basil chopped
  • 1 teaspoon thyme or oregano
  • Optional Add-Ins:
  • Red pepper flakes
  • Lemon zest
  • Cherry tomatoes
  • Grilled chicken or shrimp

Instructions
 

  • Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
  • Drizzle with olive oil, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 30–35 minutes until tender.
  • Let cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
  • Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  • Add spaghetti squash strands and toss with garlic, herbs, salt, and pepper.
  • Stir in Parmesan cheese until evenly coated.
  • Serve warm with extra herbs, Parmesan, or olive oil if desired.

Notes

  • Do not overcook the squash to avoid a mushy texture.
  • Fresh herbs provide the best flavor.
  • Drain excess moisture if needed to prevent sogginess.
  • Season well, as spaghetti squash has a mild taste.
  • Lemon zest adds brightness and enhances flavor.
