- Main Ingredients:
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic minced
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
- Herbs:
- 2 tablespoons parsley chopped
- 1 tablespoon basil chopped
- 1 teaspoon thyme or oregano
- Optional Add-Ins:
- Red pepper flakes
- Lemon zest
- Cherry tomatoes
- Grilled chicken or shrimp
Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
Drizzle with olive oil, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 30–35 minutes until tender.
Let cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds until fragrant.
Add spaghetti squash strands and toss with garlic, herbs, salt, and pepper.
Stir in Parmesan cheese until evenly coated.
